Each muffin has approximately 12g protein and tastes incredible topped with the maple vanilla yogurt glaze.

Ingredients

Muffins

  • 1¾ cups Sourdough635 pancake mix
  • 1 egg
  • ½ cup whole milk
  • ¼ cup Greek yogurt
  • 2 tbsp melted butter
  • 2 tbsp - 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • ¾ cup blueberries

Maple Vanilla Yogurt Glaze

  • ½ cup Greek yogurt
  • 2 tbsp maple syrup
  • ½ tsp vanilla extract
  • Tiny pinch of salt

Instructions

  1. Preheat oven to 350°F and line a muffin tin.
  2. In a bowl, whisk together the egg, milk, Greek yogurt, melted butter, maple syrup, and vanilla.
  3. Add the Sourdough635 mix and stir until just combined. Do not overmix.
  4. Fold in the blueberries gently.
  5. Let batter rest 5 mins (important for fluffiness with sourdough).
  6. Divide batter evenly into 7 muffin cups.
  7. Bake for about 18–22 minutes or until golden and a toothpick comes out clean.
  8. Let cool slightly before glazing.

For the Glaze

Whisk together Greek yogurt, maple syrup, vanilla, and salt until smooth. Drizzle over muffins before serving.
